Description

This Cheese, Herb & Garlic Quick Bread is a delightful no-yeast recipe that brings together the richness of cheese and the freshness of herbs and garlic. Perfect for a quick snack or side dish, it’s easy to make and incredibly flavorful.


Ingredients

7 oz / 200g block of cheese (cheddar or tasty)

cut into 3mm / 0.1″ thick slices

different widths for random ribbons throughout! (Note 1)

2 tbsp fresh rosemary

finely chopped

2 tbsp fresh parsley leaves

finely chopped

1 tsp dried oregano

1/2 tsp dried thyme

2 garlic cloves

crushed using garlic press or finely grated

3 tbsp extra virgin olive oil

1/2 tsp cooking salt / kosher salt (halve for fine table salt)

2 1/4 cups plain flour (all-purpose flour)

1 tsp baking soda (bi-carbonate soda)

sub 3 1/2 tsp baking powder

3/4 tsp cooking salt / kosher salt (halve for table salt)

1/2 cup plain yogurt

Greek or regular (full fat

unsweetened)

3/4 cup milk

full fat best

low fat ok

2 large eggs (~50-55g/2oz each)

3 1/2 tbsp (50g) unsalted butter

melted

2 tbsp olive oil

2 small garlic cloves

crushed with garlic crusher or grated


Instructions

  • Preheat the oven to 350°F (180°C) and grease a loaf pan.
  • In a mixing bowl, combine the plain flour, baking soda, and salt.
  • In another bowl, whisk together the yogurt, milk, eggs, melted butter, and olive oil until well combined.
  • Slowly add the wet ingredients to the dry ingredients while stirring until just combined.
  • Fold in the cheese slices and the herb and garlic mixture until evenly distributed.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 30-35 minutes or until the bread is golden brown and a toothpick comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Feel free to experiment with different cheeses and herbs to tailor the flavor to your liking. For a spicier kick, add some chili flakes to the batter.
