Ingredients

Scale

For the Chicken Stew:

  • 2 tablespoons clarified butter

  • 1 pound skinless, boneless chicken thighs

  • 4 slices bacon

  • 5 new potatoes, chopped

  • 2 carrots, chopped

  • 2 stalks celery, chopped

  • ½ red onion, finely chopped

  • 2 cloves garlic, finely chopped

  • 1 cup chicken broth

  • 1 cup 2% milk

  • 1 (10.75 ounce) can condensed cream of mushroom soup

  • ½ (10 ounce) package frozen corn

  • ¼ teaspoon smoked paprika

  • Salt and ground black pepper to taste

For the Dumplings:

  • 1 cup baking mix (such as Bisquick®)

  • ⅓ cup milk

Instructions

  • Cook the Chicken Stew:

    • Heat clarified butter in a large pot over medium heat.

    • Add bacon slices and cook until crispy. Remove bacon and set aside, leaving the drippings in the pot.

    • Add diced chicken thighs to the pot and sauté until browned.

    • Stir in chopped potatoes, carrots, celery, red onion, and garlic. Cook for 5 minutes.

    • Add chicken broth, milk, and cream of mushroom soup. Stir in frozen corn, smoked paprika, salt, and pepper.

    • Bring to a simmer, allowing the flavors to meld for about 10 minutes.

  • Prepare the Dumplings:

    • In a separate bowl, mix Bisquick and milk until just combined (do not overmix).

    • Drop spoonfuls of the dumpling batter onto the simmering stew.

    • Cover the pot and let the dumplings steam for about 15 minutes, or until they are fluffy and cooked through.

Notes

  • For extra flavor, you can add a variety of herbs like thyme or parsley to the stew.

  • Ensure that the dumplings are not overmixed, as this could make them dense instead of fluffy.

  • For a twist, try adding other vegetables such as peas or mushrooms to the stew.
