Description
This Chicken Caesar Salad combines tender grilled chicken, crisp romaine lettuce, and a creamy homemade Caesar dressing for a refreshing meal that’s perfect for lunch or dinner.
Ingredients
2 boneless
skinless chicken breasts (about 1 lb)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 cups chopped romaine lettuce (about 2 heads)
1/2 cup freshly shaved Parmesan cheese
2 cups homemade or store-bought croutons
1/2 cup mayonnaise
2 tablespoons freshly squeezed lemon juice
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
2 garlic cloves
minced
1/4 cup grated Parmesan cheese
1 teaspoon anchovy paste (optional for authentic flavor)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Instructions
- Preheat your grill or a stovetop grill pan over medium heat.
- Rub the chicken breasts with olive oil, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center. Let the chicken rest for a few minutes before slicing.
- In a bowl, mix together the mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, grated Parmesan cheese, anchovy paste (if using), salt, and pepper to make the Caesar dressing.
- In a large bowl, combine the chopped romaine, sliced chicken, and croutons. Drizzle with Caesar dressing and toss to combine.
- Top with shaved Parmesan cheese before serving.
Notes
For a lower-calorie version, use Greek yogurt instead of mayonnaise in the dressing. If you prefer, you can substitute grilled shrimp or tofu for the chicken.
