Ingredients
⅔ cup whole-egg mayonnaise
2 tbsp freshly grated parmesan
1 tbsp lemon juice
1 tsp dijon mustard
½ tsp freshly minced garlic
1 tsp Worcestershire sauce
¼ tsp sea salt flakes
¼ tsp freshly cracked black pepper
4 slices streaky bacon
500 g minced chicken
1 tsp garlic powder
1 tsp onion powder
1 tsp sweet paprika
½ tsp sea salt flakes
½ tsp freshly cracked black pepper
8 small flour tortillas
Olive oil
1 tsp olive oil
1 tbsp unsalted butter
½ cup panko breadcrumbs
¼ tsp sea salt flakes
1 tbsp freshly grated parmesan
2 cups shredded cos lettuce
¼ cup freshly grated parmesan
Instructions
- In a bowl, mix together the mayonnaise, grated parmesan, lemon juice, dijon mustard, minced garlic, Worcestershire sauce, sea salt, and black pepper to create the quick Caesar dressing.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.
- In the same skillet, add the minced chicken, garlic powder, onion powder, sweet paprika, sea salt, and black pepper. Cook until the chicken is browned and cooked through.
- While the chicken cooks, prepare the crispy panko topping by heating olive oil and butter in a small pan. Add panko breadcrumbs and sea salt, cooking until golden and crispy. Stir in the grated parmesan.
- Warm the flour tortillas in another skillet until pliable.
- Assemble each taco by spreading a layer of quick Caesar dressing, adding cooked chicken, crispy bacon, and a sprinkle of crispy panko topping. Top with shredded lettuce and extra grated parmesan before serving.
Notes
For a creamier dressing, you can adjust the amount of mayonnaise to your preference. Feel free to add more toppings like diced tomatoes or avocado.
