Description
Delicious Chicken Enchiladas filled with tender shredded chicken, smothered in zesty enchilada sauce, and topped with melted cheese. A perfect meal for any occasion!
Ingredients
2 cups cooked and shredded chicken
1 can store-bought red enchilada sauce (10 oz)
2 cups shredded Monterey Jack cheese
8 flour tortillas
1 tablespoon vegetable oil
1 small onion chopped
2 cloves garlic minced
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Chopped cilantro for garnish
Sour cream for serving
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent.
- In a large bowl, combine the shredded chicken, sautéed onion and garlic, cumin, chili powder, salt, and pepper. Mix well.
- Spread a thin layer of the red enchilada sauce on the bottom of a baking dish.
- Fill each flour tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the shredded Monterey Jack cheese on top.
- Cover the dish with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes, until the cheese is bubbly and golden.
- Garnish with chopped cilantro and serve with a dollop of sour cream on top.
Notes
Feel free to customize the level of spiciness by choosing different enchilada sauces or adding jalapeños to the chicken mixture.
