Ingredients

1 cup cooked rice
1 medium sweet potato diced into 1-inch cubes
1 pound chicken breast cubed into bite-sized pieces
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
1 cup broccoli florets
1 tablespoon soy sauce
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss the diced sweet potato with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper.
- Spread the sweet potato on a baking sheet and roast for 20 minutes.
- While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium-high heat.
- Add the cubed chicken to the skillet and season with salt and pepper. Cook until browned and cooked through, about 7-10 minutes.
- Add the broccoli florets to the skillet with the chicken and stir in the soy sauce. Cook for another 5 minutes until the broccoli is tender.
- Once the sweet potatoes are done, combine them with the chicken and broccoli mixture.
- Serve the mixture over cooked rice.
