4 chicken thighs
bone-in and skin-on
4 slices of bacon
chopped
8 ounces mushrooms
sliced (button or cremini)
1 small onion
diced
3 cloves garlic
minced
1 cup heavy cream
1 cup chicken broth
1 tablespoon olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley
chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear until golden brown and crispy, about 5-7 minutes. Flip and cook for another 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add chopped bacon and cook until crispy. Add diced onion and mushrooms, sautéing until softened, about 5 minutes. Stir in minced garlic and dried thyme, cooking for an additional 1 minute.
- Pour in chicken broth and bring to a simmer. Reduce heat to low, then stir in heavy cream. Season with salt and pepper to taste.
- Return the chicken thighs to the skillet, spooning sauce over them. Cover and simmer on low for 15-20 minutes, or until chicken is cooked through.
- Garnish with fresh chopped parsley before serving.
Notes
For added flavor, try using chicken thighs that are marinated beforehand. You can also swap regular bacon for turkey bacon for a lighter option.
