Delicious and healthy Chicken Tzatziki Bowl featuring marinated grilled chicken served with fresh vegetables and creamy tzatziki sauce.
Ingredients
2 boneless
skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
½ tsp dried oregano
Salt and pepper
to taste
1 cup cooked rice (white or brown)
1 cup cherry tomatoes
halved
½ cup cucumber
thinly sliced
¼ cup red onion
thinly sliced
Fresh parsley or dill
chopped (for garnish)
1 cup Greek yogurt
½ cucumber
peeled
seeded
and finely diced or grated
2 cloves garlic
minced
1 tbsp fresh dill
chopped (or 1 tsp dried dill)
1 tbsp lemon juice
1 tbsp olive oil
Salt and pepper
to taste
Instructions
- Preheat your grill or a grill pan over medium-high heat.
- In a bowl, combine olive oil, paprika, garlic powder, oregano, salt, and pepper. Coat the chicken breasts with the marinade and let it sit for at least 15 minutes.
- While the chicken is marinating, prepare the tzatziki sauce by mixing Greek yogurt, diced cucumber, minced garlic, dill, lemon juice, olive oil, salt, and pepper in a bowl. Set aside.
- Grill the marinated chicken for about 6-7 minutes on each side or until cooked through and internal temperature reaches 165°F. Remove from grill and let rest.
- In serving bowls, layer cooked rice, halved cherry tomatoes, sliced cucumber, and red onion.
- Slice the grilled chicken and place it on top of the vegetables.
- Drizzle with tzatziki sauce and garnish with fresh parsley or dill. Serve immediately.
Notes
For extra flavor, consider marinating the chicken overnight. You can substitute or add other vegetables of your choice.
