1 tablespoon olive oil

½ teaspoon black pepper

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 medium onion

4 cloves garlic

1 lb fresh or frozen Hatch green chiles

1 lb tomatillos

1 cup chicken broth

1 teaspoon dried oregano

1 tablespoon lime juice

Fresh cilantro

46 large flour tortillas

1 cup shredded Monterey Jack or Cheddar cheese

½ cup cooked rice

½ cup black beans

Sour cream or Mexican crema

Extra cilantro for garnish


Instructions

  • Heat the olive oil in a large pot over medium heat. Season the pork with salt, pepper, cumin, and smoked paprika, then sear it in the pot until browned on all sides.
  • Add the diced onion and garlic to the pot and sauté until softened.
  • Stir in the roasted, peeled, and chopped Hatch green chiles and quartered tomatillos.
  • Pour in the chicken broth, add the dried oregano, and bring the mixture to a simmer. Cover and cook for about 30 minutes or until the pork is tender.
  • Once cooked, stir in the lime juice and adjust seasoning as needed.
  • To assemble the burritos, lay a tortilla flat and add a scoop of pork chili verde, a sprinkle of cheese, rice, and black beans. Roll up the burrito tightly.
  • Serve the burritos warm, garnished with fresh cilantro and optional sour cream or Mexican crema.
