½ cup brown sugar

2 large eggs at room temperature

4 very ripe bananas mashed

1 teaspoon vanilla extract

1 cup chocolate chips plus extra for topping


Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a mixing bowl, combine all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
  • In another bowl, whisk together melted butter, granulated sugar, brown sugar, and eggs until smooth.
  • Stir in the mashed bananas and vanilla extract into the butter-sugar mixture until well combined.
  • Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
  • Pour the batter into the prepared loaf pan and sprinkle additional chocolate chips on top.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
