Ingredients
1 cup salted butter
softened
1 tsp vanilla extract
1/4 tsp almond extract
optional
2 cups all-purpose flour
spooned & leveled or weighed out
3/4 cup powdered sugar
pinch of salt
1 can cherry pie filling
4 ounces milk or white chocolate
for decorating
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, vanilla extract, and almond extract until well combined.
- Gradually add in the flour, powdered sugar, and a pinch of salt, mixing until a dough forms.
- Using a cookie scoop, portion out the dough and flatten each piece in your palm.
- Place a teaspoon of cherry pie filling in the center of each dough circle, then fold the edges over to enclose the filling completely and form a cookie ball.
- Place the filled cookie balls on the prepared baking sheet, leaving enough space between each.
- Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden.
- Once baked, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, melt the chocolate in a microwave-safe bowl in 20-second increments, stirring in between until smooth.
- Drizzle the melted chocolate over the cooled cookies for decoration.
Notes
Feel free to adjust the amount of cherry filling according to personal preference. For added flair, you can also sprinkle crushed nuts on top of the chocolate before it sets.
