Ingredients
2 cups all-purpose flour (250 g)
1 tablespoon instant coffee granules or espresso powder
¼ cup granulated sugar (50 g)
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter (1 stick or 115 g)
cold and cut into cubes
¾ cup heavy cream or buttermilk (180 ml)
1 large egg
1 teaspoon pure vanilla extract
¾ cup semi-sweet chocolate chips (130 g)
½ cup powdered sugar (60 g)
1 tablespoon brewed coffee
½ teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the all-purpose flour, instant coffee granules, granulated sugar, baking powder, baking soda, and salt.
- Add the cold cubed unsalted butter to the dry ingredients and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the heavy cream (or buttermilk), egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Fold in the chocolate chips.
- Turn the dough onto a lightly floured surface and knead gently a few times. Pat the dough into a circle about 1-inch thick. Cut into wedges or use a biscuit cutter.
- Place the scones on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- For the optional glaze, whisk together powdered sugar, brewed coffee, and vanilla extract until smooth. Drizzle over warm scones before serving.
Notes
For a richer flavor, feel free to use dark chocolate chips. Serve warm for the best taste!
