¾ cup heavy cream or buttermilk (180 ml)

1 large egg

1 teaspoon pure vanilla extract

¾ cup semi-sweet chocolate chips (130 g)

½ cup powdered sugar (60 g)

1 tablespoon brewed coffee

½ teaspoon vanilla extract


Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the all-purpose flour, instant coffee granules, granulated sugar, baking powder, baking soda, and salt.
  • Add the cold cubed unsalted butter to the dry ingredients and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the heavy cream (or buttermilk), egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Fold in the chocolate chips.
  • Turn the dough onto a lightly floured surface and knead gently a few times. Pat the dough into a circle about 1-inch thick. Cut into wedges or use a biscuit cutter.
  • Place the scones on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
