0.5 cup erythritol sweetener granulated
0.25 cup unsalted butter softened
1 large egg
1 teaspoon vanilla extract

1 cup sugar free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, erythritol, baking soda, and salt.
- In another bowl, cream together the softened butter and erythritol until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Fold in the sugar free chocolate chips until evenly distributed throughout the dough.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a chewier cookie, slightly under-bake them and let them cool on the baking sheet for a longer time before transferring.
