4 egg yolks
1/4 cup granulated sugar
1 tsp vanilla paste or extract
1 2/3 cups heavy whipping cream
2.5 oz dark chocolate
2 to 3 tbsp granulated sugar (for caramelizing)
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, whisk together the egg yolks and granulated sugar until well combined.
- Heat the heavy cream and vanilla in a saucepan over medium heat until it just starts to simmer.
- Remove from heat, add the dark chocolate, and stir until completely melted and smooth.
- Gradually pour the warm chocolate mixture into the egg yolk mixture, whisking continuously until fully combined.
- Strain the mixture through a fine sieve into ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for about 25-30 minutes or until the edges are set but the centers still jiggle slightly.
- Remove from the oven and let cool, then refrigerate for at least 2 hours.
- Before serving, sprinkle the tops with granulated sugar and use a kitchen torch to caramelize until golden brown.
Notes
For a richer chocolate flavor, use high-quality dark chocolate. Ensure the creme brulees are thoroughly chilled before caramelizing the top.
