Ingredients
2 cups all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon instant espresso powder
½ cup unsalted butter softened
1 cup granulated sugar
1 large egg room temperature
1 teaspoon vanilla extract
1 cup milk
½ cup strongly brewed coffee cooled
¾ cup unsalted butter softened
3 cups powdered sugar
1 tablespoon instant espresso powder
1 tablespoon hot milk or water
1 teaspoon vanilla extract
1–2 tablespoons milk as needed for consistency
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, salt, and instant espresso powder.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually incorporate the dry ingredients into the wet mixture, alternating with the milk and brewed coffee until the batter is smooth.
- Scoop tablespoon-sized portions of the batter onto the prepared baking sheet, leaving space between each.
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
- For the filling, beat the softened butter with the powdered sugar, espresso powder, hot milk or water, and vanilla extract until creamy. Adjust the consistency with milk as needed.
- Once the cakes are cooled, spread a generous amount of coffee cream filling between two cakes to form the whoopie pie.
