Ingredients

All purpose flour

Dutch process cocoa powder

Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  • In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  • Add in the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, Dutch process cocoa powder, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the whole milk and sour cream, mixing until just combined.
  • Spoon the batter into the cupcake liners, filling each about 2/3 full, and bake for 18-20 minutes or until a toothpick comes out clean.
  • While the cupcakes cool, prepare the raspberry ganache by heating heavy cream and pouring it over chopped semi-sweet chocolate in a bowl. Stir until smooth and add raspberry preserves.
  • For the frosting, beat softened butter and powdered sugar until creamy, then add raspberry preserves and beat until fluffy.
  • Frost the cooled cupcakes with the raspberry buttercream and drizzle the raspberry ganache over the top.
  • Garnish with fresh raspberries before serving.

Notes

Make sure all ingredients are at room temperature for the best results. The espresso powder is optional but enhances the chocolate flavor.
