Description

Indulge in these rich and decadent Chocolate Thumbprint Cookies, filled with silky chocolate ganache and topped with a playful sprinkle of nonpareils.


Ingredients

1 1/2 cups (188 g) all-purpose flour

spooned and leveled

1/2 cup (40 g) cocoa powder

Dutch process

1/2 tsp salt

1/2 tsp baking powder

3/4 cup (168 g) unsalted butter

softened

3/4 cup (165 g) light brown sugar

packed

1/4 cup (50 g) granulated white sugar

2 egg yolks

at room temperature

1 1/2 tsp vanilla bean paste or extract

1 cup (200 g) semi-sweet chocolate chips

1/2 cup (120 ml) heavy whipping cream

nonpareils for sprinkling on top

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, cocoa powder, salt, and baking powder. Set aside.
  • In a separate bowl, cream the softened butter with the light brown sugar and granulated sugar until fluffy.
  • Add the egg yolks and vanilla bean paste or extract to the butter mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Scoop tablespoon-sized portions of dough and roll them into balls, then place them on the prepared baking sheet.
  • Using your thumb or the back of a spoon, create a small indent in the center of each cookie.
  • Bake for 12-15 minutes until set, then let cool on the baking sheet.
  • While cookies are cooling, prepare the chocolate ganache by heating the heavy whipping cream until simmering, then pour it over the semi-sweet chocolate chips in a bowl, stirring until smooth.
  • Fill the indents in the cooled cookies with the chocolate ganache and sprinkle with nonpareils if desired.

Notes

Make sure the eggs are at room temperature for better incorporation. You can substitute dark chocolate for a richer ganache if preferred.
