Ingredients
Bittersweet chocolate
Semi-sweet chocolate
Milk chocolate
Heavy cream
Unsalted butter

Instructions
- Chop the chocolates finely and place them in a heatproof bowl.
- In a saucepan, heat the cream until it just begins to simmer. Remove from heat and pour over the chopped chocolate.
- Let it sit for a few minutes, then stir until smooth. Add butter and mix until fully incorporated.
- Refrigerate the ganache for about 2 hours or until firm.
- Once set, use a melon baller or scoop to form small balls of ganache.
- Roll each truffle in your choice of coatings: cocoa powder, nuts, sprinkles, or tempered chocolate.
- Place the truffles on a baking sheet lined with parchment paper and refrigerate until serving.
