Instructions
- Preheat your oven to 325°F (160°C) and line a mini muffin pan with paper liners.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well blended. Press this mixture firmly into the bottom of each muffin liner.
- In another large bowl, beat the cream cheese until smooth, then add in the sour cream, eggs, and vanilla extract. Mix until fully incorporated and creamy.
- Pour the cheesecake mixture evenly over the prepared crust in the muffin pan.
- Bake for about 20-25 minutes or until the cheesecakes are set but still slightly jiggly in the center.
- Allow them to cool completely at room temperature, then refrigerate for at least 2 hours.
- Once chilled, melt the white almond bark or candy melts and drizzle over each cheesecake bite. Then, decorate with green candy melts and mini ball sprinkles.
Notes
For a variation, try adding peppermint extract to the filling or swapping the sprinkles for crushed candy canes for a festive crunch.
