1/2 cup blanched almonds
1/4 cup chopped red onion
1/2 teaspoon chopped and seeded serrano chile
1 teaspoon kosher salt
1/4 cup extra virgin olive oil
Instructions
- In a food processor, combine the cilantro, blanched almonds, chopped red onion, serrano chile, and kosher salt.
- Pulse until the mixture is finely chopped, then slowly drizzle in the olive oil while processing until well blended.
Notes
For a milder flavor, you can omit the serrano chile or reduce the quantity. This pesto can be stored in the refrigerator for up to a week.
