1/4 cup cold unsalted butter cubed
3/4 cup milk

1 large egg
1/3 cup packed light brown sugar
2 teaspoons ground cinnamon
1/4 cup unsalted butter melted
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- Add the cubed cold butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
- In another bowl, combine the milk, vanilla extract, and egg, then add this to the flour mixture and stir until just combined.
- In a small bowl, mix the brown sugar and ground cinnamon with the melted butter.
- Fill each muffin liner halfway with batter, then add a spoonful of the cinnamon sugar mixture. Top with the remaining batter.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
