Ingredients
¾ cup milk
2 tablespoons white distilled vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 large egg
2 tablespoons butter
melted
1 ½ teaspoons vanilla extract
5 ½ tablespoons packed brown sugar
¼ cup butter
melted
1 ½ teaspoons ground cinnamon
¼ cup butter
softened
2 ounces cream cheese
at room temperature
¾ cup confectioners’ sugar
½ teaspoon vanilla extract

Instructions
- In a small bowl, mix the milk and vinegar together and let it sit for about 5 minutes to create buttermilk.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the egg, melted butter, vanilla extract, and the buttermilk mixture.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- In a separate bowl, mix together the brown sugar, melted butter, and ground cinnamon for the filling.
- Heat a non-stick skillet over medium heat and lightly grease with cooking spray.
- Pour ¼ cup of pancake batter onto the skillet and immediately drizzle some of the cinnamon swirl filling on top.
- Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter and filling.
- For the cream cheese icing, beat together the softened butter, cream cheese, confectioners’ sugar, and vanilla extract until smooth.
- Serve the pancakes warm, drizzled with cream cheese icing on top.
