This Classic Caesar Salad Dressing brings an authentic taste of Italy right to your kitchen, with a creamy texture and a perfect balance of flavors.
Ingredients
1 pasteurized egg yolk (or 2 tbsp mayonnaise)
2–3 anchovy fillets (or 1 tsp anchovy paste)
1 small garlic clove
crushed
1 tbsp Dijon mustard
2 tbsp fresh lemon juice
1 tsp Worcestershire sauce
3/4 cup (180 ml) extra-virgin olive oil
2 tbsp finely grated Parmesan cheese
Salt
to taste
Freshly ground black pepper
to taste
Optional: 1 tsp capers
chopped
Instructions
- In a mixing bowl, combine the egg yolk (or mayonnaise), anchovy fillets (or paste), crushed garlic, Dijon mustard, lemon juice, and Worcestershire sauce.
- Whisk these ingredients together until smooth.
- Slowly drizzle in the olive oil while continuing to whisk, creating an emulsion.
- Stir in the grated Parmesan, and season with salt and freshly ground black pepper to taste.
- If desired, add in chopped capers for an extra layer of flavor.
Notes
For a vegetarian version, substitute the anchovies with additional Worcestershire sauce for seasoning.
