5 large egg yolks
1 and 1/3 cups (320ml) water
1 cup (200g) granulated sugar
1/3 cup (38g) cornstarch
1/4 teaspoon salt
1/2 cup (120ml) fresh lemon juice
1 Tablespoon lemon zest
2 Tablespoons (28g) unsalted butter
Instructions
- In a saucepan, whisk together the water, sugar, cornstarch, and salt over medium heat until the mixture thickens.
- Remove from heat and stir in the lemon juice, lemon zest, and butter, mixing until smooth.
- In a separate bowl, whisk the egg yolks and gradually add some of the hot lemon mixture to temper them, then stir back into the saucepan.
- Cook the filling briefly until set, then pour into a cooled, baked pie crust.
- Prepare the meringue with the egg whites and top the pie with it, spreading to the edges to seal.
- Bake the pie in a preheated oven until the meringue is lightly browned.
Notes
For a more stable meringue, add a pinch of cream of tartar when whipping the egg whites.
