certified D.O.P. if possible

¼ cup extra-virgin olive oil

7 garlic cloves

peeled and slivered

Small dried whole chile or pinch crushed red pepper flakes

1 teaspoon kosher salt

1 large fresh basil sprig or ¼ teaspoon dried oregano

more to taste


Instructions

  • In a large saucepan, heat the olive oil over medium heat until shimmering.
  • Add the slivered garlic and dried chile (or red pepper flakes) and sauté until the garlic is golden, about 1-2 minutes.
  • Crush the San Marzano tomatoes by hand and add them to the saucepan along with the kosher salt.
  • Simmer the sauce on low heat for about 30 minutes, stirring occasionally.
  • Add the fresh basil or dried oregano and adjust seasoning to taste before serving.

Notes

For a smoother sauce, blend the mixture before serving. Adjust the spice level with more or less red pepper as desired.
