½ onion chopped

¼ cup melted butter

¼ cup all-purpose flour

2 cups milk

2 cups chicken stock

1 ½ cups coarsely chopped broccoli florets

1 cup matchstick-cut carrots

1 stalk celery thinly sliced

2 ½ cups shredded sharp Cheddar cheese

salt and ground black pepper to taste


Instructions

  • In a large pot, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent.
  • Stir in the melted butter and then add the flour, cooking for about 2 minutes until lightly browned.
  • Gradually whisk in the milk and chicken stock, bringing the mixture to a simmer.
  • Add the broccoli, carrots, and celery, cooking until the vegetables are tender, about 15 minutes.
  • Remove the pot from heat and stir in the shredded cheddar cheese until melted and smooth.
  • Season with salt and ground black pepper to taste before serving.
