Ingredients

2 cups cooked corned beef
shredded
1.5 lb Yukon Gold potatoes
diced
1 yellow onion
finely chopped
1 green bell pepper
diced
2 cloves garlic
minced
2 tbsp chopped fresh parsley
4 large eggs
1 tbsp unsalted butter
1 tbsp olive oil
0.5 tsp smoked paprika
Black pepper and kosher salt to taste
Instructions
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the onions and bell pepper, and sauté until softened, about 5 minutes.
- Stir in the diced potatoes and cook until they begin to brown and become tender, about 15 minutes.
- Add the shredded corned beef, garlic, smoked paprika, salt, and pepper. Stir to combine and cook for another 5 minutes.
- Make four wells in the hash and crack an egg into each well.
- Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes.
- Remove from heat, sprinkle with parsley, and serve hot.
Notes
Feel free to add other vegetables or spices according to your preference. For a spicy kick, consider adding jalapeños or hot sauce.
