thawed if frozen
3 tablespoons granulated sugar
1/2 cup extra-virgin olive oil
2 tablespoons fresh lime juice
2 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. black pepper
2 Granny Smith apples
cored and chopped
1 cup walnuts
chopped
1/4 cup sliced scallions
2–3 hearts of romaine lettuce
chopped
Instructions
- In a bowl, combine the cranberries and granulated sugar, stirring until the cranberries are evenly coated. Let sit for about 10 minutes to macerate.
- In a separate bowl, whisk together the olive oil, lime juice, Dijon mustard, salt, and black pepper until fully combined.
- In a large mixing bowl, combine the chopped apples, walnuts, sliced scallions, and romaine lettuce.
- Pour the cranberry mixture and the dressing over the salad ingredients, tossing gently to combine.
- Serve immediately, or refrigerate for up to one hour before serving for enhanced flavor.
Notes
For added sweetness, consider using a mix of tart and sweet apples. You can also substitute walnuts with pecans if preferred.
