Description
This Cranberry Fluff Dessert combines the tartness of cranberries with a creamy, sweet base, making it a delightful treat for any occasion.
Ingredients
2 cups (200 g) fresh or frozen cranberries
¾ cup (150 g) granulated sugar
1 can (8 oz / 225 g) crushed pineapple drained
1 tablespoon orange juice (optional)
1 cup (240 ml) heavy whipping cream chilled
2 tablespoons powdered sugar
1 teaspoon vanilla extract
2 cups (100 g) mini marshmallows
½ cup (60 g) chopped pecans or walnuts (optional)
crushed pecans or a few fresh cranberries (optional)
Instructions
- In a mixing bowl, combine cranberries and granulated sugar. If desired, add orange juice and mix well. Let sit for 10 minutes.
- In another bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
- Gently fold the cranberry mixture and crushed pineapple into the whipped cream until well combined.
- Add mini marshmallows and chopped nuts (if using), and fold gently.
- Transfer to a serving dish and refrigerate for at least 30 minutes to set.
- Garnish with crushed pecans or fresh cranberries before serving.
Notes
This dessert can be made a day in advance for best flavor and texture. Adjust sugar to taste based on the tartness of the cranberries.
