5 navel oranges

4 to 6 bone-in

skin-on chicken thighs (about 2 pounds total)

Salt and pepper

1 large shallot

sliced

2½ cups fresh or frozen cranberries

1 (3-inch) cinnamon stick

5 tablespoons honey


Instructions

  • Preheat your oven to 375°F (190°C).
  • In a baking dish, arrange the chicken thighs and season with salt and pepper.
  • Zest and juice 3 oranges, and pour the juice over the chicken. Slice the remaining 2 oranges and lay them on top of the chicken.
  • Add the sliced shallot, cranberries, cinnamon stick, and honey to the dish.
  • Mix everything gently to combine.
  • Cover the dish with foil and bake for 30 minutes. Remove the foil for the last 10 minutes to allow the chicken to brown.
  • Once cooked, remove from oven and let rest for a few minutes before serving.

Notes

Feel free to adjust the sweetness by adding more or less honey and experiment with additional spices if desired.
