Description
Cranberry-Orange Chicken is a delightful dish combining the zesty flavor of oranges with the tartness of cranberries, all beautifully roasted with succulent chicken thighs.
Ingredients

5 navel oranges
4 to 6 bone-in
skin-on chicken thighs (about 2 pounds total)
Salt and pepper
1 large shallot
sliced
2½ cups fresh or frozen cranberries
1 (3-inch) cinnamon stick
5 tablespoons honey
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, arrange the chicken thighs and season with salt and pepper.
- Zest and juice 3 oranges, and pour the juice over the chicken. Slice the remaining 2 oranges and lay them on top of the chicken.
- Add the sliced shallot, cranberries, cinnamon stick, and honey to the dish.
- Mix everything gently to combine.
- Cover the dish with foil and bake for 30 minutes. Remove the foil for the last 10 minutes to allow the chicken to brown.
- Once cooked, remove from oven and let rest for a few minutes before serving.
Notes
Feel free to adjust the sweetness by adding more or less honey and experiment with additional spices if desired.
