skinless chicken breasts or thighs
1 cup fresh cranberries
1 large orange
2 tablespoons honey or maple syrup
1 tablespoon olive oil
2 cloves garlic minced
1 teaspoon fresh thyme or rosemary
Salt and pepper
1/2 cup chicken broth or water
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat. Season the chicken with salt and pepper, then sear the chicken for about 5 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh cranberries, orange juice, honey or maple syrup, thyme or rosemary, and chicken broth or water. Stir to combine, bringing the mixture to a simmer.
- Return the chicken to the skillet, spooning the sauce over it. Transfer the skillet to the preheated oven.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let rest for a few minutes before serving.
Notes
For extra flavor, consider marinating the chicken in the orange juice and herbs for a few hours before cooking.
