Instructions

- Prepare the dates by making a lengthwise slit and removing the pit.
- In a bowl, mix cream cheese, chopped dried cranberries, toasted and chopped pecans, honey, vanilla extract, and a pinch of salt until smooth.
- Stuff each date with the cream cheese mixture, pressing gently to ensure they are filled.
- If desired, place stuffed dates on a baking sheet and toast in the oven for about 10 minutes until warm and slightly golden.
- Serve warm or at room temperature, garnished with extra chopped pecans or cranberries if desired.
