150 g bacon
diced
2 tablespoons olive oil
4 large eggs
1 cup grated Parmesan cheese
1 cup heavy cream
3 cloves garlic
minced
Salt and freshly ground black pepper

Fresh parsley

Instructions
- Cook the spaghetti according to the package instructions until al dente, then drain, reserving a cup of pasta water.
- In a large skillet, heat olive oil over medium heat and add the diced bacon, cooking until crispy.
- Add minced garlic to the skillet and sauté for another minute until fragrant.
- In a bowl, whisk together the eggs, Parmesan cheese, heavy cream, salt, and black pepper.
- Add the drained spaghetti to the skillet with bacon and garlic, then quickly pour the egg mixture over the pasta, tossing to combine. If the sauce is too thick, add reserved pasta water gradually.
- Serve immediately, garnished with freshly chopped parsley.
Notes
For a richer flavor, you can substitute pancetta for bacon. Be careful not to scramble the eggs when mixing them with hot pasta.
