Ingredients
2 cups elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
2 cups shredded cheddar cheese
1/2 cup mozzarella cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt and pepper to taste
2 boneless skinless chicken breasts
cut into bite-sized pieces
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
vegetable oil
1/3 cup honey
1 tablespoon soy sauce
1 teaspoon cracked black pepper
1/2 teaspoon red pepper flakes (optional)
Instructions
- Cook the elbow macaroni according to package instructions until al dente, then drain and set aside.
- In a saucepan, melt the butter over medium heat, then whisk in the flour to create a roux. Cook for about 1 minute until golden.
- Slowly whisk in the milk and heavy cream, cooking until the mixture thickens.
- Stir in the cheddar and mozzarella cheese until melted, followed by garlic powder, onion powder, salt, and pepper.
- In a separate bowl, soak the chicken pieces in buttermilk for at least 30 minutes.
- Combine flour, paprika, salt, and black pepper in a shallow dish, then coat each chicken piece in the flour mixture.
- Heat vegetable oil in a pan over medium heat and fry the chicken until golden and cooked through, about 5-7 minutes per side.
- In a small saucepan, combine honey, soy sauce, cracked black pepper, and red pepper flakes. Heat until bubbling to create the glaze.
- Toss the fried chicken in the honey pepper glaze, then serve it over the creamy mac and cheese, garnished with extra cracked black pepper if desired.
Notes
For an extra kick, add more red pepper flakes to the honey glaze. This dish can also be baked for a crispy topping by adding breadcrumbs before placing it in the oven.
