3 lbs. Potatoes peeled and cut into pieces (russet
yukon gold
or red)
1/2 cup Butter
1 1/2 cups Half-n-Half or cream or whole milk
1/2 cup Sour Cream
2 teaspoons Salt
1/2 cup Quality Parmesan Cheese plus 1/2 cup for garnish
1/2 teaspoon Pepper
Instructions
- In a large pot, bring salted water to a boil and add the potatoes. Cook until tender, about 20 minutes.
- Drain the potatoes and return them to the pot. Add butter, half-n-half, sour cream, salt, pepper, and Parmesan cheese.
- Mash the potatoes until smooth and creamy. Adjust seasoning to taste.
- Serve warm, garnished with additional Parmesan cheese.
Notes
For an extra creamy texture, use a potato ricer instead of a masher. Feel free to adjust the amount of Parmesan to suit your taste.
