This Creamy Pepperoncini Chicken Skillet Recipe is quick, easy, and packed with flavor, making it the perfect weeknight dinner.

2 tbsp butter
2 lbs chicken cut into thin strips
1 tsp sea salt
1 tsp ground pepper
1 white onion diced
2 tbsp garlic diced
½ cup chicken stock
½ cup roasted red pepper drained and sliced
1 cup heavy cream
½ cup parmesan cheese shredded
1 tbsp Italian seasoning
½ cup pepperoncini peppers drained
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the chicken strips to the skillet and season with sea salt and ground pepper. Cook until browned and cooked through, about 8-10 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add diced onion and garlic. Sauté until onion is translucent.
- Pour in the chicken stock and bring to a simmer.
- Stir in the roasted red pepper, heavy cream, parmesan cheese, Italian seasoning, and pepperoncini peppers. Mix well.
- Return the chicken to the skillet and stir to coat in the creamy sauce. Simmer for an additional 5 minutes.
- Serve hot, garnished with additional parmesan if desired.
Notes
For a lighter version, you can substitute half of the heavy cream with low-fat milk. This dish pairs well with pasta or rice.
