Description

The Ultimate Creamy Potato Soup is a rich and comforting dish that combines the flavors of smoky bacon, tender potatoes, and creamy goodness for a perfect bowl of warmth.


Ingredients

6 strips uncooked bacon cut into small pieces

3 Tablespoons butter unsalted or salted will work

1 medium yellow onion chopped (about 1.5 cup/200g)

3 large garlic cloves minced

⅓ cup all-purpose flour (42g)

2 ½ lbs gold potatoes peeled and diced into pieces no larger than 1” (this was about 6 Large potatoes for me/1.15kg)

4 cups chicken broth (945ml)

2 cups milk (475ml)

⅔ cup heavy cream (155ml)

1 ½ teaspoon salt

1 teaspoon ground pepper

¼½ teaspoon ancho chili powder

⅔ cup sour cream (160g)

Shredded cheddar cheese

chives

and additional sour cream and bacon for topping optional


Instructions

  • In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  • Melt the butter in the bacon drippings over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  • Sprinkle in the flour and stir continuously for about 2 minutes to create a roux.
  • Gradually whisk in the chicken broth, ensuring there are no lumps. Bring to a simmer.
  • Add the diced potatoes, salt, pepper, and ancho chili powder. Simmer until the potatoes are tender, about 20 minutes.
  • Reduce the heat and stir in the milk and heavy cream. Allow the soup to heat through without boiling.
  • Remove from heat and stir in the sour cream until fully combined. Adjust seasoning to taste.
  • Serve hot, topped with crispy bacon, cheddar cheese, chives, and additional sour cream if desired.

Notes

Feel free to customize the toppings to suit your preference. For a spicier kick, increase the amount of ancho chili powder used.
