1 ½ cups cold water
¾ cup uncooked white rice
2 cups milk
divided
⅓ cup white sugar
¼ teaspoon salt
1 large egg
beaten
⅔ cup golden raisins
1 tablespoon butter
½ teaspoon vanilla extract
Instructions
- In a medium saucepan, combine the cold water and rice. Bring to a boil, then reduce heat, cover, and simmer until rice is tender, about 20 minutes.
- Stir in 1 ½ cups of milk, sugar, and salt. Cook on medium heat, stirring frequently until the mixture thickens, about 10 minutes.
- In a small bowl, whisk together the beaten egg and remaining ½ cup of milk. Gradually stir in a small amount of the hot rice mixture to temper the egg, then stir the egg mixture back into the pot.
- Stir in the raisins, butter, and vanilla extract. Cook for an additional 2-3 minutes until heated through.
- Remove from heat and let cool slightly before serving warm or chilled.
