Description

This Creamy Salmon Corn Chowder is the perfect dish for cozy nights in, featuring tender salmon, creamy Yukon gold potatoes, and sweet bursts of corn, all made in one pot for ease and comfort.

Ingredients

Bacon

Unsalted Butter

Yukon Gold Potatoes

Celery

Carrots

Yellow Onion

Garlic

Clam Juice

Low Sodium Chicken Broth

Chicken Bouillon

Half and Half

All-Purpose Flour

Cornstarch

Dried Herbs (dill

basil

oregano

thyme)

Red Pepper Flakes

Salmon Fillets

Salt and Pepper

Instructions

  • In a large pot, cook the chopped bacon over medium heat until crisp. Remove bacon and set aside, leaving the drippings in the pot.
  • Add unsalted butter to the pot, then sauté the diced onion, celery, carrots, and garlic until softened, about 5 minutes.
  • Stir in the diced Yukon gold potatoes, clam juice, chicken broth, and chicken bouillon. Bring to a boil, then reduce to a simmer and cook until potatoes are tender, about 15 minutes.
  • Whisk in the half and half, followed by the flour and cornstarch to thicken. Stir until smooth and cook for an additional 5 minutes.
  • Gently fold in the salmon fillets, corn, dried herbs, red pepper flakes, salt, and pepper. Cook for another 5-7 minutes, or until the salmon is cooked through.
  • Adjust seasoning to taste and serve warm, garnished with crispy bacon if desired.

Notes

Feel free to customize this chowder with your favorite fish or adjust the spices to your liking. Pair with a salad or oyster crackers for a complete meal.
