Instructions
- In a large pot, cook the chopped bacon over medium heat until crisp. Remove bacon and set aside, leaving the drippings in the pot.
- Add unsalted butter to the pot, then sauté the diced onion, celery, carrots, and garlic until softened, about 5 minutes.
- Stir in the diced Yukon gold potatoes, clam juice, chicken broth, and chicken bouillon. Bring to a boil, then reduce to a simmer and cook until potatoes are tender, about 15 minutes.
- Whisk in the half and half, followed by the flour and cornstarch to thicken. Stir until smooth and cook for an additional 5 minutes.
- Gently fold in the salmon fillets, corn, dried herbs, red pepper flakes, salt, and pepper. Cook for another 5-7 minutes, or until the salmon is cooked through.
- Adjust seasoning to taste and serve warm, garnished with crispy bacon if desired.
