  • Yield: 4 servings 1x

Description

This Creamy Seafood Pasta recipe is a quick and delightful weeknight meal that combines fresh shrimp and scallops in a rich and flavorful sauce, perfect for any seafood lover.

Ingredients

Scale

1 pound fine linguine

3 tablespoons extra virgin olive oil

8 cloves garlic sliced

12 ounces cherry tomatoes halved

1/2 cup dry white wine

3/4 cup low-sodium seafood stock

3/4 cup heavy cream

1/2 cup grated parmesan cheese

5 green onions sliced

1/4 cup minced flat-leaf Italian parsley

salt and pepper to taste

2 cups reserved pasta water

1/4 cup extra virgin olive oil

1 pound shrimp

3/4 pound sea scallops

Instructions

  • Cook the linguine according to the package instructions until al dente. Reserve 2 cups of pasta water, then drain the pasta.
  • In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the sliced garlic and cook until fragrant, about 1 minute.
  • Add the cherry tomatoes and sauté for another 3-4 minutes until they start to soften.
  • Pour in the white wine and seafood stock, bringing it to a simmer for 3-5 minutes to reduce slightly.
  • Stir in the heavy cream and parmesan cheese, mixing until combined. Season with salt and pepper to taste.
  • In another skillet, heat 1/4 cup of olive oil over medium-high heat. Season the shrimp and scallops with salt and pepper, then cook them until golden and cooked through, about 2-3 minutes on each side.
  • Add the cooked pasta to the cream sauce, tossing to coat. If the sauce is too thick, add reserved pasta water gradually until you reach the desired consistency.
  • Finally, fold in the cooked shrimp and scallops, and sprinkle with green onions and parsley before serving.

Notes

Feel free to customize this dish with your favorite seafood or adjust the creaminess by adding more or less heavy cream.
