Ingredients
2 pounds chicken breasts boneless and skinless
½ teaspoon salt
½ teaspoon pepper freshly ground
2 tablespoons olive oil
2 tablespoons butter unsalted
3 cloves garlic minced
1 cup sun-dried tomatoes drained and roughly chopped
1 tablespoons Italian seasoning
1 cup heavy cream
2 cups milk
1 cup Parmesan cheese freshly grated
8 ounce penne or macaroni uncooked
3 cups baby spinach
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil and butter over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-7 minutes per side. Remove from the skillet and slice.
- In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds.
- Add the sun-dried tomatoes and Italian seasoning, stirring to combine.
- Pour in the heavy cream and milk, and bring to a simmer.
- Stir in the Parmesan cheese until melted and smooth.
- Cook the pasta according to package instructions and drain.
- Add the cooked pasta and baby spinach to the sauce, mixing well to combine.
- Add the sliced chicken back to the skillet and mix until heated through. Serve hot.
Notes
For a little extra flavor, consider adding red pepper flakes for a hint of spice or fresh basil as a garnish.
