Creamy Tuscan Salmon is a delightful dish featuring juicy salmon fillets drenched in a rich and creamy sauce with sun-dried tomatoes and fresh spinach, perfect for an elegant dinner.

1 pound fresh salmon cut into 4 pieces
Salt & pepper to taste
1/4 teaspoon garlic powder
Flour for dredging
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chicken broth or dry white wine
1 teaspoon lemon juice
1/4 cup sun-dried tomatoes
1 cup heavy/whipping cream
1–2 cups (packed) fresh baby spinach
Instructions
- Season the salmon pieces with salt, pepper, and garlic powder. Dredge each piece in flour, shaking off excess.
- In a large skillet, heat olive oil and butter over medium heat. Add the salmon and cook for about 4-5 minutes on each side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add chicken broth (or wine) and lemon juice, scraping up any browned bits from the bottom.
- Stir in sun-dried tomatoes and bring to a simmer. Add the heavy cream and stir until the sauce is smooth.
- Add fresh spinach and cook until wilted. Return the salmon to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Serve warm, garnished with additional sun-dried tomatoes if desired.
Notes
For best results, use fresh baby spinach and adjust the amount of sun-dried tomatoes to your taste.
