Instructions

  • Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans with butter and flour.
  • In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  • Add the large eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the whole milk until smooth.
  • Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  • While the cake is baking, prepare the crème brûlée custard by heating the heavy cream in a saucepan until just simmering.
  • In a bowl, whisk together the egg yolks and a portion of granulated sugar, then slowly pour in the hot cream while whisking continuously. Strain the mixture and set aside to cool.
  • Once the cakes are baked and cooled, place one layer on a serving plate and top it with the crème brûlée custard. Sprinkle with chopped toasted pecans.
  • Top with the second layer of cake, and drizzle the caramel glaze over the top before sprinkling with sugar for the brûlée topping.
  • Using a kitchen torch, carefully melt the sugar on top until it forms a crispy caramel layer. Allow to cool slightly before slicing and serving.
