Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together unsalted butter and granulated white sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then incorporate vanilla bean paste.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
  • Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet, spacing them evenly apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • While the cookies cool, prepare the pastry cream by heating whole milk in a saucepan. In a separate bowl, whisk together egg yolks, granulated sugar, and cornstarch.
  • Slowly pour the hot milk into the egg mixture, whisking constantly until combined, then return to the saucepan and cook over medium heat until thickened.
  • Once thick, remove from heat and let it cool, stirring occasionally.
