Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together unsalted butter and granulated white sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then incorporate vanilla bean paste.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet, spacing them evenly apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- While the cookies cool, prepare the pastry cream by heating whole milk in a saucepan. In a separate bowl, whisk together egg yolks, granulated sugar, and cornstarch.
- Slowly pour the hot milk into the egg mixture, whisking constantly until combined, then return to the saucepan and cook over medium heat until thickened.
- Once thick, remove from heat and let it cool, stirring occasionally.
- Once cookies are cool, sandwich them with the pastry cream and top with a sprinkle of granulated sugar. Use a kitchen torch to caramelize the sugar for the classic brûlée effect.
