Ingredients
Canned chickpeas – 15 ounces
drained and rinsed
Grated zucchini – ½ cup
Grated carrot – ½ cup
Minced onion – ¼ cup
Large eggs – 2
Oat flour or breadcrumbs – ½ cup
Italian seasoning – ½ tablespoon
Sea salt – 1 teaspoon
Garlic (fresh or powdered) – 1-2 cloves
or ½ teaspoon garlic powder
Black pepper – to taste
Paprika – ¼ teaspoon
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, mash the drained chickpeas until creamy, leaving some texture.
- Add grated zucchini, grated carrot, minced onion, and large eggs to the chickpeas and mix well.
- Stir in oat flour or breadcrumbs, Italian seasoning, sea salt, garlic, black pepper, and paprika until fully combined.
- Using your hands, form the mixture into nugget shapes and place them on the prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through to achieve a golden brown crispiness.
- Once done, remove from the oven and let them cool slightly before serving.
Notes
For a gluten-free version, use oat flour instead of breadcrumbs. Feel free to customize your seasoning based on personal preference.
