¾ cup hot water (plus more as needed)
4 tablespoons vegetable oil (divided)
1 teaspoon salt
1 ½ cups finely chopped scallions (green parts only)
Sesame oil for brushing
Extra flour for rolling out the dough
Instructions
- In a large bowl, combine the flour and salt.
- Gradually add the hot water and mix until a dough begins to form. Knead the dough until smooth, about 5 minutes.
- Cover the dough with a damp cloth and let it rest for at least 30 minutes.
- Divide the dough into 4 equal pieces and roll each piece into a thin circle on a floured surface.
- Brush each circle with vegetable oil, sprinkle with scallions, and roll them up into a log. Then coil the log into a spiral and flatten gently.
- Heat a skillet over medium heat, add oil, and cook each pancake until golden brown and crispy, about 3-4 minutes per side.
- Serve hot, brushed with sesame oil for extra flavor.
