Ingredients
Banana peppers – 10-12 pieces
sliced into ¼-inch rings and seeds removed
Buttermilk – 1 cup
or substitute with regular milk plus 1 tsp vinegar
All-purpose flour – 1 cup
Cornmeal – ½ cup
Baking powder – ½ teaspoon
Garlic powder – ½ teaspoon
Smoked paprika – ½ teaspoon
Salt – ¼ teaspoon
Black pepper – ¼ teaspoon
Oil – for frying
Instructions
- In a bowl, soak the banana pepper rings in buttermilk for about 15 minutes to tenderize.
- In a separate bowl, mix together the all-purpose flour, cornmeal, baking powder, garlic powder, smoked paprika, salt, and black pepper to create the batter.
- Heat oil in a deep frying pan to 350°F (175°C).
- Remove the pepper rings from buttermilk, allowing excess to drip off, then coat the rings in the batter mix.
- Carefully place battered rings in the hot oil and fry until golden brown, about 3-4 minutes.
- Remove from oil and drain on paper towels. Serve hot.
Notes
For an extra kick, consider adding some cayenne pepper to the batter. Serve with your favorite dipping sauce!
