Crispy Roasted Parmesan Potatoes are a delightful side dish, perfectly crunchy on the outside and soft on the inside, enriched with savory Parmesan and spices for an unforgettable flavor.
Ingredients
750 g / 1.5 lb baby potatoes
halved (about 3.5cm / 1.75″
20 – 24 potatoes)
2 tbsp olive oil
plus more for drizzling
1/2 cup / 50 g grated parmesan
the sand-like type
1/2 tsp garlic powder (or sub with onion powder)
1/2 tsp dried oregano or thyme
1/2 tsp paprika
1/4 tsp salt (I use table salt
leave out to lower sodium)
1/2 tsp black pepper
3/4 cup sour cream
or sub with plain yoghurt
or a combination of both
1/4 cup finely chopped green onions/scallions
plus more for garnish (or chives)
Instructions
- Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a large bowl, combine the halved baby potatoes with olive oil, stirring to coat them evenly.
- In a separate bowl, mix together the Parmesan, garlic powder, oregano, paprika, salt, and pepper.
- Sprinkle the Parmesan mixture over the potatoes and toss until they are well coated.
- Spread the potatoes in a single layer on the prepared baking tray.
- Roast in the oven for about 30 minutes or until golden and crispy, turning halfway through.
- While the potatoes are roasting, prepare the dipping sauce by mixing sour cream with chopped green onions.
- Serve the crispy roasted Parmesan potatoes warm, drizzled with additional olive oil and accompanied by the dipping sauce.
Notes
For extra crispiness, ensure the potatoes are spaced evenly on the baking tray. Feel free to adjust spices to your taste preference.
