Ingredients
2 pounds beef chuck roast cubed
4 carrots sliced
3 medium potatoes cubed
1 medium onion chopped
3 cloves garlic minced
4 cups low-sodium beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
2 bay leaves
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon cornstarch optional
Instructions
- In a large bowl, season the beef chuck roast with salt and black pepper.
- Place the beef in the Crock Pot along with the carrots, potatoes, onion, and garlic.
- In a separate bowl, mix the beef broth, tomato paste, Worcestershire sauce, dried thyme, and bay leaves, then pour over the meat and vegetables.
- Cover the Crock Pot and cook on low for 8 hours or high for 4 hours.
- If desired, remove the lid during the last 30 minutes of cooking to thicken the stew with cornstarch mixed in a little water.
Notes
Feel free to add any other vegetables you like, such as peas or green beans. For a richer flavor, sear the beef in a pan before adding it to the Crock Pot.
