Ingredients

2 lbs ground beef (or a mix of beef and pork)

1 can black beans

drained and rinsed

1 can kidney beans

drained and rinsed

1 can pinto beans

drained and rinsed

1 large onion

diced

1 green bell pepper

diced

1 red bell pepper

diced

3 cloves garlic

minced

1 can diced tomatoes

1 can tomato paste

1 cup beef broth or water

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon cayenne pepper

1 teaspoon salt

½ teaspoon black pepper


Instructions

  • In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Transfer the cooked beef to a Crock Pot and add the black beans, kidney beans, pinto beans, onion, green bell pepper, red bell pepper, garlic, diced tomatoes, tomato paste, and beef broth.
  • Sprinkle chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper over the mixture. Stir well to combine.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Serve hot, topped with shredded cheddar cheese, sour cream, green onions, fresh cilantro, and sliced jalapeños, if desired.

Notes

Feel free to customize the spice level by adjusting the cayenne pepper. It’s a great recipe for meal prep and freezes well.
